So many​ of us are growning our own herbs now and that means we need great recipes to use them up. Fresh basil is the star here - along with creamy mozzarella, bold tomatoes, and olive oil. Perfect to start any Mediterranean meal.

 

No precise measurements needed here. You'll want fresh basil leaves, sliced ripe tomatoes, and sliced fresh mozzarella. Arrange the tomato slices alternately with the mozzarella on a plate.

 

Place approx. 1/4 cup* olive oil in a small bowl and add 1 finely minced basil leaf, dash coarse salt, and dash cracked pepper. Mix well and drizzle over the tomatoes and mozzarella. Snip the basil leaves into strips and sprinkle them on the top. Garnish with a sprig of whole basil leaves.

  • The 1/4 cup olive oil measure is for approx. 4 servings. Adjust the amount up or down according to your needs.

  • Use unusually pretty heirloom tomatoes here, yellows and greens.
