
Homemade Goodness
I love to receive and give handmade gifts. It says "I care about you enough to make something with my own hands". Herbed oils couldn't be simpler to make; the only hard part is waiting for the flavors to do their thing. And don't forget to make some for yourself, too!
Pretty bottles or jars
Olive Oil
Fresh Herbs
Sterilize the bottles or jars in the dishwasher. Fill almost to the top with good quality olive oil. Bruise a handful of herbs* (see Notes) and add to the bottle. Cap tightly. Store in the pantry or on the counter top (I store mine on the kitchen window sill because they are so pretty with sunlight glistening off them) for 3 weeks.
Label and you're done....they're ready to use in your favorite recipes or give to someone special.

Buy the best olive oil you can afford. Don't break the bank, but quality does matter.

Use herb blends for versatility. Rosemary pairs well with chicken, tarragon with fish, dill with potatoes & salads, thyme with beef and lamb, and of course basil and oregano for anything Mediterranean.

Don't forget aromatics like garlic, shallots, bay leaves, peppercorns, and even dried peppers.

There are lovely new bottles and jars available, but don't forget to browse estate auctions, yard sales, and thrift stores. The "old" ones I have are much prettier than the new ones.

How to not "mess up" this recipe:

Really, the only thing you could do wrong is forget to bruise the herbs. Just firmly roll them around in the palms of your hands. Bruising or chopping releases those essential oils (and that's where the flavor comes from).

Ever since my first visit to NYC, I've gotten my olive oil from Calandra Cheese Shop on Arthur Ave in The Bronx. When shopkeeper Diego learned it was my first trip to the Big Apple he gave me a whole pound of fresh, hand-crafted mozzarella! I bought a gallon of the best imported olive oil on the planet from him and have been a loyal customer ever since.
